Chili Lime Shrimp & Mango Salad

Fresh, juicy, sweet, tangy, and packed with flavor in every bite. This easy shrimp salad comes together in just 15 minutes and tastes like summer in a bowl.

Ingredients

Shrimp
  • 1/2 lb shrimp, peeled and deveined
  • 1/2 tbsp extra virgin olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • Salt and black pepper, to taste
  • 1 pinch red pepper flakes (optional)
Mango Salad
  • 1 ripe mango, diced
  • 1/2 ripe avocado, diced
  • 1/4 cup diced green bell pepper
  • 2–3 tbsp finely chopped shallot or red onion
  • 2 tbsp chopped fresh cilantro
  • 1/2 tbsp olive oil
  • Juice of 1 lime
  • 1 pinch salt
For Serving
  • Lime wedges (optional)

Instructions

  1. Toss shrimp with olive oil, smoked paprika, garlic powder, salt, pepper, and red pepper flakes if using. Heat skillet over medium-high heat and cook shrimp for 2–3 minutes until pink and cooked through.
  2. Combine mango, avocado, bell pepper, shallot, cilantro, olive oil, lime juice, and salt in large bowl and toss gently.
  3. Add warm shrimp to salad and toss gently to combine. Serve immediately with lime wedges if desired.

Tip: Serve right away — the avocado browns quickly and the shrimp is best while still warm against the cool, fresh salad. If prepping ahead, make the salad without the avocado and add it just before serving.
