Sweet Potato Waffle

A crispy, cheesy waffle made with just sweet potato and melted cheese, no batter needed. Top it with creamy avocado and a fried egg for a satisfying breakfast that comes together in under 15 minutes.

Ingredients

  • 1 medium sweet potato, cooked and sliced or mashed
  • 1/2 cup shredded mozzarella cheese (divided)
  • 1/2 ripe avocado, sliced
  • 1 fried egg
  • Salt and pepper to taste
Optional toppings
  • Everything bagel seasoning
  • Chili flakes or chili oil
  • Chopped chives
  • Drizzle of honey

Instructions

  1. Preheat your waffle iron to medium-high heat.
  2. Sprinkle half the mozzarella evenly onto the waffle plates.
  3. Lay the cooked sweet potato over the cheese in an even layer, then top with the remaining mozzarella.
  4. Close the waffle iron and press down. Cook for 6-8 minutes until deeply golden with crispy cheese edges. Don't open it early - if it sticks, just close it and cook another minute or two until it releases on its own.
  5. Transfer to a plate and top with sliced avocado and a fried egg. Season with salt and pepper, then finish with your choice of toppings.

Tip: The cheese on the bottom and top is what holds the waffle together - don't skip it. Sweet potato won't crisp up the same way regular potato does because the natural sugars brown faster, but the edges will still get crispy and delicious.
